peace

it's finally time to hit the road
we've had quite the week around here
last thursday we got a call from dan's sister, who lives with pop pop( dan's dad)
he had collapsed & the ambulance was on its way
we feared the worst


we dropped everything & headed to the emergency room
as soon as we approached the exit on the highway we knew something was wrong
police cars & lights everywhere
camera & news crews on every corner
we were forced to turn around
by the time we reached the hospital we were told they were on diversion
he had been taken some other undetermined ED
the reason...
there was a bomb threat
of course there was a bomb threat
i swear i felt like we were in a grey's anatomy episode by this time

long story short
we finally found him
he was stable
those bright blue eyes just a twinklin
he's been in the hospital all week
praise the lord he's ok
just needs a few things done, but he's ok & he's stable
dan's sister is more than capable of flying solo for the week while we're gone

savannah has had strep throat
followed by a full body rash
now she has pink eye

my computer was infected with a virus from the depths of hell
i was on the phone with my dell dudes for a total of 8 and a half hours
yep, 8.5 hours
shockingly no cuss words were said & i didn't shed a tear
please be impressed with this improved behavior

between the oil spill
alex the storm
& now the forecasted rain
this is all been quite the cocktail for worry
for this professional worrier

if you're my facebook friend
i apologize for all the grumbling


anyways
on to better things
i usually try to whip up some dips, salsa & chicken for us to snack on while we're at the beach
because mama doesn't cook on vacation
so the girls & i have spent this morning in the kitchen
oh yeah
the dishwasher died the same day my computer flipped out
please notice the new bright & shiny one



she stands on tippie toes
all the time

please excuse the dirty floor

the bean dip is fabulous
here you go:

1 can chick peas drained
1 can black beans drained
2 tomatoes diced
2 avocados cubed
2 green onions chopped
approx 6-7oz of Catalina dressing

mix & let the flavors marry overnight
i didn't add the avocado yet, will do that when we get there
serve with pita chips or whatever suits your fancy
delish






we whipped up some more of the homemade chocolate chip muffins
from two posts ago




i take 6 boneless breasts & add chicken broth
1 can diced peppers
cumin, garlic powder, salt & pepper
& cook on low for several hours
shred apart when done
add the homemade salsa
that i'll share another time
& tada, lunch is served






praying this is what the next 8 days have to offer....

for some reason I just like this post a lot! Maybe because it feels so much like vacation is just around the corner. I will try all of your recipes! I'm not just saying that, I WILL! What a great idea. I would do this too only we're headed on a plane. But we plan to stop at trader joes and fill the fridge with all kinds of goodies which is similar, right? Are you going to miss me? I feel like we won't chat for awhile... suddenly i feel lonely. :) just kidding. Have a wonderful vacation and you know that I will be waiting to be smitten with your photos. No pressure or anything.

I hope your Pop Pop feels better soon. I know exactly how you feel with the worrying...I pray you have a beautiful trip and get to enjoy the place you love. I'm so proud of how you handled the computer situation!!!

Goodness that is alot in one week, I tell ya when it rains it pours doesn't it, it seems you have weathered the storm and ready for your vacation...enjoy your time and I do hope your daughter and your father in law are feeling much better!! happy 4th of July Paige!! xo

If bad things come in threes you should be set. Crazy though.
I hope Dan's father will be okay. What does he need to have done? Heart problems?
My dishwasher is on it's last legs too, I'm feeling something new and fun coming my way.
Once again Miss C on those toes. I swear she would be a great ballerina. She has the strength and legs for it.
I hope you enjoy your vacation. NO OIL!

Sounds like quite a week, I bet you are more than ever ready for this vacation now! I'm glad Pop-Pop is okay and I will be trying a few of these recipes for our upcoming week at the beach.

(Love that picture of Caroline on tippie toes....that was always me as a kid....still is sometimes, although I admit, I get some strange looks when I do it in public...even though I'm short.)

Oh how you need this vacation! I am so jealous! I would do anything to be back there again! I pray that all the stars will line up and that you will have a wonderful time and make some more great memories in your beloved getaway spot! I can never imagine you using curse words and crying! you seem so calm and collected... that part made me giggle... (secret... I have been known to respond in that not so calm way sometimes too... usually after emotional stress... but there has been improvement for me too)... Cheers to you! I understand that victory! =)

Hi Paige - everytime I see a picture of your tippy-toes girl it makes my heart melt. There is something so wonderfully innocent about that shot. I just love it.
