a tale of pumpkin bread & a broken nose

while the pumpkins have been displayed around the house for a few weeks
& the mums have been on the porch long enough that they're actually struggling to hang on,
fall doesn't officially begin at our home until the first loaf of pumpkin bread has been baked.

caroline has been kindly asking for her favorite treat for several days. she & i locked pinkies in an official pinkie promise yesterday before she walked out the door. the promise being that she would indeed walk in the door to that glorious smell.

i had fully intended on going all pioneer woman on ya'll & photographing the process. or at least featuring a slice of the glorious bread on a plate, maybe a few crumbs placed strategically around. as real life would have it, i was in such a hurry that i just dumped all the ingredients in a big bowl at once. no mixing dry ingredients first. no whisking the eggs before adding them. & if truth be told, i popped those babies in the oven before the oven was completely preheated. & friends, this is old school pumpkin bread. complete with bleached white flour.
i hang my head in shame.

60 minutes later, my kitchen smelled like heaven & despite myself, i had two perfect loaves of chocolate chip pumpkin bread. clearly a fool proof recipe. this was given to me years ago by a friend & i'll gladly share with you.  it yields two loaves so you can share the love with your neighbor.

Pumpkin Bread
3 1/2 cups all purpose flour
3 c sugar
2 tsp baking soda
2 tsp cinnamon
4 eggs
1 can pumpkin ( not filling)
1 c oil
1 c water
1 pack mini chocolate chips

bake at 350 for 60-70 minutes. yields 2  9 inch loaf pans

i'm heading out with madison this morning
to have, her as the orthopedist put it,  "whoa, that's most certainly a broken nose" nose reset.

while her nose is obviously broken, with it's extra dent down the center
& leaning off to the right
complete with her shiner
& swollen face
the child is much much more disappointed that she will not be allowed
to compete in their final competition saturday.

last night as we sat around the dinner table
dan prayed & thanked the Lord for our blessings,
& asked that "everything be straightened out today".....

seriously?
"straightened out"?
i cracked up out loud during that prayer.
the guy loves a chance to throw a corny pun
( see what you're missing out on savannah?)

since we're going down in a blaze of glory with our old school pumpkin bread,
i thought she might need a couple more comfort items when she gets home today.
please don't judge me.

  4. That poor girl! I cringed just reading about getting her nose reset. I haven't made my annual pumpkin chocolate chip bread yet. I will have to see how your recipe compares to mine which was also given to me by a friend several years ago. Hope your girl is indeed straightened out and comforted by all those yummies.

  11. I suspect the Good Lord enjoys a bit of straight talk and a bit of humor every now and then. Maybe Dan wasn't really meaning it the way it came out. I remember helping some friends from college move and a group of us youth all gathered together to say a prayer and the one saying the prayer said something like, "please bless us all to have a smooth move." Several of us started laughing during the prayer.
By the way, I love the pumpkin bread...I'm trying it. Anything that you can add chocolate chips to is a good recipe in my book. I add chocolate chips to my banana bread and to my chili.

  15. okay...we cook alike (dump in at once is my favorite way) and no apologies necessary when it comes to comfort food/snacks. I'm so sorry for sweet Madison. Sending hugs your way too...since moms feel every bump, bruise and broken bone that happens to our babies:)

  19. Ugh having it "set" back in place just send chills up my spine... I have a pumpkin muffin recipe ya'll might like. And this can be put in a loaf pan.

1 box of spice cake mix (don't add any oil, eggs, NOTHING just the dry mix itself)
1 can of regular pumpkin (Not FILLING)
1 bag of Hersey's cinnamon chips
    Bake at 350
** When your mixing it, it may seem you need to add a liquid or something but don't just keep mixing. The pumpkin takes a while to mix together.
    ENJOY!!!!!!

  20. So sorry about Madison! I hope she heals quickly. There's a little something on the way to your house that may be a little pick-me-up for all you ladies.

Your pumpkin bread looks delicious! If you do need a recipe made with whole wheat bread, I can email you mine. I've been on a mission to find a good one, and I think I finally did. I learned the hard way that pumpkin bread needs some sugar, otherwise, what's the point?!

  21. A broken nose is most definitely no fun...but it looks like you have some great "medicine" for her to come home to!

  22. That pumpkin bread sounds divine!! And you know, a broken nose (and missing competition) most certainly deserves lots and lots of icecream!! xoxo
