grilled chicken, zucchini and pesto


 i want to share a little dish i made for the girls.
dan was headed out for the evening
which usually means i serve something along the lines
of "chick food".
that & i had a seemingly empty fridge.


we had some left over grilled chicken from the night before.
the chicken was simply marinated it in lemon juice & evoo
 seasoned with garlic powder, paprika
salt & pepper & grilled.
we also had a little pasta left over from spaghetti earlier in the week.
& i had a zucchini that was all alone.
so...

i cut the chicken into bite size pieces and heated them back up in a little olive oil.
added in the chopped zucchini and cooked until soft.
added in the left over pasta & heated all that together.

added in about 1/2 cup of pesto
shaved some fresh parmesan
a little more fresh basil 
& topped with cherry tomatoes.

super simple
healthy
& incredibly yummy!

  6. oh....i would definately love that and so easily made with leftovers! I love all your food inspirations, i tried the chicken parmesan, Beka LOVED it! Maybe I will just start e-mailing you and see what your having for dinner! :)
